Simply pour your gravy in through the heat-resistant strainer and watch as the lean gravy settles to the bottom and the fat rises to the top. As this happens, the stopper prevents any of the fat from rising up the spout. Once it has settled, you can remove the strainer and the stopper and commence pouring. The spout siphons off from the bottom of the jug, giving you delicious lean gravy and leaving the unwanted fat behind.
