Divertimenti's Oaty Pancakes with Blueberry Maple Syrup
Divertimenti's Oaty Pancakes with Blueberry Maple Syrup

Ingredients:
Serves 2 - Makes 8 medium sized pancakes¾ cup rolled oats
120ml buttermilk
105g plain flour
50g caster sugar
½ tsp bicarbonate of soda
½ tsp baking powder
¼ tsp salt
2 eggs
180ml full fat milk
½ tsp vanilla extract
clarified butter, for frying
1 small punnet blueberries
240ml pure maple syrup
Method:
In a bowl mix oats and buttermilk. Let stand for about 15-30 minutes. Meanwhile, combine the flour, sugar, baking powder, sugar, bicarbonate of soda and salt in a small bowl.
In a larger bowl, beat the eggs, milk and vanilla. Stir in the flour and oats mixture. Mix until well combined.Place a large non stick shallow fry pan over a medium heat. When hot, coat the pan with a few teaspoons of clarified butter.Pour the batter in ½ cup portions into the fry pan and cook until the pancakes are browned on the bottom, the centre begins to bubble and the edges begin to look dry. Turn with a spatula and cook for about another 2 minutes. Coat pan with more butter as needed to cook remaining pancakes.To make the syrup: place the blueberries and maple syrup in a small saucepan and cook over a low heat just until the blueberries begin to burst or split.Serve the pancakes immediately or if necessary keep warm on a baking tray in a 120 C oven.Stack and pour over a generous amount of syrup.
