Chris Cogan's Caipirinha Recipe
Chris Cogan's Caipirinha

Ingredients:
50ml CachaçaFresh limes, ¼
25ml sugar syrup or 2 heaped tsp caster sugar
Crushed Ice
Method:
Cut your lime into quarters and place half in the glass.Add the sugar syrup or caster sugar and muddle vigorously with the limes. To do this you can either use a wooden muddler (long wooden pestle) or alternatively you can use the back of a fork or spoon if one isn't available.
Now you add your crushed ice. You can either use an ice crusher or if you don't have one, simply wrap the ice cubes in a tea towel and bash with a rolling pin against a hard surface. Fill the glass ¾ full.
*If the chips are too small and fine they will melt too quickly and make your cocktail very diluted. If the ice is too large then it won't melt enough and the drink will be too strong.
Now you're ready to add the Cachaça (pronounced ca-sha-sa). Take a cocktail stirrer (or the back of a fork) and while placing your palm over glass, insert the stirrer and mix - don't stir. This eliminates the need for a cocktail shaker.
Top the glass with crushed ice, add a few straws and maybe an extra wedge of lime for garnish and you're ready to serve.
