Chicken Tagine with Lemon & Dates
Chicken Tagine with Lemon & Dates

Ingredients:
12 chicken thighs, with skin and bone½ head of garlic, crushed
1 tbsp smoked sweet paprika
1 tbsp ground cumin
1 small knob fresh ginger, grated
Sea salt and freshly ground black pepper
Extra virgin olive oil
2 small lemons, thinly sliced
1 large or 2 small white onions, thinly sliced
20 pitted dates, halved and soaked in water
1 bunch corainder, chopped
Method:
Combine the garlic, paprika, cumin, ginger, salt, pepper and olive oil. (To save time and chopping you can combine all above ingredients in a bowl and blitz with an immersion blender until smooth).Add the chicken and combine to coat. Assemble chicken in a single layer and top with lemon slices, cover and refrigerate for at least 1 hour.
Meanwhile, heat some olive oil in a saucepan and add the onions. Sweat the onions over medium heat until soft.
Place the onions in the base of your tagine and preheat the oven to 200°C.
Place the marinated chicken on top of the onions and bake for 30 minutes. Add the drained softened dates and bake for a further 10-15 minutes or until cooked through.
Top with chopped coriander and serve with couscous.
