Diveritmenti's Rocket & Slow Roasted Tomato Salad
Divertimenti's Rocket & Slow Roasted Tomato Salad

Ingredients:
Serves 4-6300g wild rocket
200g feta, crumbled
500g cherry tomatoes on the vine tomatoes, halved and slow roasted
100g good quality black Kalamata olives, pitted and halved
100g pinenuts, toasted
Extra virgin olive oil
Salt and Pepper
Method:
To slow roast the tomatoes, place them on a tray lined with baking parchment. Drizzle with olive oil, salt, pepper and a pinch of sugar. Place in oven and roast slowly for about 1 ½ hour.To assemble the salad: layer the rocket with the tomatoes, feta, olives, pinenuts. And finish with a drizzle of olive oil, salt and pepper.
