The Japanese call the traditional western chef's knife a 'Gyutoh' which translates to 'cow sword' indicating that knives of this shape would have been used for cutting meat. Because of the supreme sharpness offered by Japanese steel and the familiar shape these knives gained a huge following in the west as cooks knives. The half bolstered construction makes this knife lighter than a traditional western cook's knife but the cutting performance is outstanding and allows this knife to be used for almost any purpose. The forged Global 27cm cooks knife has a broad back which tapers towards the tip just like a European knife. This knife is forged for extra weight and bulk which makes the knife very strong and powerful. it's a popular choice with professional chefs who like to have one tough knife capable of performing a wide variety of tasks. The heavy and long 27cm blade lets you make long clean slices when preparing meat or fish and will power through larger vegetables with ease. The Global GF series handle is rounded like the G series provides a good grip and is seamless for easy cleaning and excellent hygiene. It tapers gently towards the blade for comfortable handling.
Global GF Series
The Global GF series knives all have strong powerful drop forged blades which are a little thicker and heavier than the lighter G series. These knives are intended for heavy duty use in professional kitchens. The handles are hollow and contain sand which gives precise control over the balance and poise of the knife.
