This straight edged slicing knife excels when cutting cold roasted meats. The closer crumblier texture of cold meats requires the continuous cutting pressure that can be applied with the straight edge. The hollows ground into the face of the blade create pockets of air which help prevent thin slices of food from sticking to the blade. This is called a Granton edge, the reduced friction between the knife and the meat helps to prevent the slices from tearing or braking apart when cut. The straight edged slicer can also be used to great advantage to carve hot roasts too.
