The Yaxell Ran 18cm Chinese Chefs Knife is exactly the right size and shape to give the maximum amount of control over the blade. Skilled Chinese chefs will use their chopper for almost every imaginable cutting task in the kitchen. The fine edge and deep square blade cut, shred, chop and slice with ease. This Yaxell Ran 18cm Chinese Chefs Knife has a fine sharp edge; it's not a cleaver and should never be used to cut through bones.
Yaxell Ran knives are made in Seki, Japan; a city famous for centuries for the manufacture of Samurai swords and fine Japanese cutlery. They're made from 69 layers of Damascus steel with a core of VG10, Cobalt, Molybdenum, Vanadium stainless steel hardened to Rockwell 61. This gives Ran knives their outstanding cutting performance and edge retention as well as the dramatic, attractive 'wood grain' pattern of layered steel on the blade which is unique to each knife. Every time that a sheet of white hot steel is folded and hammered, impurities are forced out of the metal making it purer and stronger. Each repeated folding makes the central layer harder and purer which in turn means that it can be ground to a sharper, longer lasting edge. The outer layers are tougher and more robust making the knife strong and durable. The more layers of steel that a knife blade consists of, the stronger the knife becomes and the better cutting performance becomes.
The handles of all Yaxell Ran knives are made of Micarta, a very strong and hygienic material made from layers of canvas cloth set in polycarbonate resin and formed at high temperature and pressure. The resulting knife handle is every bit as hygienic as a stainless steel one but much more comfortable to hold, particularly after prolonged use.

We aim to dispatch orders within 3-5 working days but this may take longer due to the specialised nature of some of our products and unpredictable demand (many are made by small craft workshops in remote places and some of our suppliers are based overseas). In this event we will contact you to advise you of the situation and receive your instructions.

If you are not satisfied with your purchase, you can return your item(s) within 28 days of delivery for a refund to the original payment method. Items must be unused, returned in their original packaging and in a re-saleable condition to be eligible for a refund. Note, non-stock items that have been especially sourced for an order and perishables cannot be refunded.
Refunds will be credited to the original payment method as soon as they are received but some banks may take up to 14 days to credit your account.
Items can be returned to our warehouse at the address below. Items must be sent with a completed returns form and despatch note.
Divertimenti - Returns
Please obtain proof of postage and keep it until you have received your refund. Note, the cost of returning items will only be refunded in the case of faulty goods.
Returns can also be made in person at our Divertimenti Store in London, or via any Steamer Trading Cookshop or Kitchens Cookshop store. Proof of purchase (receipt, despatch note, order confirmation email) is required. Please note, stores do not process refunds for online orders.
