Steak & Sauce Masterclasses at Divertimenti Cookery School + Ultimate Steak Cooking Essentials Guide
Join me on Saturday 2nd October, when I will be back in the Divertimenti Cookery School celebrating the skills of great butchery and how to cook the very best steak. This class is a partnership between me (the chef), The Parson’s Nose (butchers) and our favourite WÜSTHOF knives. When you are investing in great meat, it is so important to have the confidence to cook it well, and that’s what this class is all about.
So, what to expect? We’ll be kicking off with a butchers demonstration with Head Butcher from The Parson’s Nose, Matt. Watching him cut down a whole rib into steaks, explaining where the different cuts come from and how that affects the taste and texture is revelatory. We’ll then head to the demonstration bench, where we’ll compare the different cuts, and I’ll show you how to achieve the perfect ‘doneness’ of your meat.
After this it’s over to you, as I guide you through making three of my favourite sauces. For barbecue vibes, I love Chimichurri, the Argentinian answer to steak sauce, which is a blend of chopped chilli, garlic, fresh herbs, and a great excuse to practice your knife skills. For a bit more indulgence, I’ll teach you my no-fuss Béarnaise sauce with a top tip to stop it splitting.
But no steak and sauces class would be complete without mastering a pan sauce. After cooking your own steak to the perfect doneness, you’ll discover how quick and easy it is to throw together a creamy red wine & peppercorn sauce.
These classes are a wonderful full circle moment for me as I founded the Divertimenti Cookery School back in 2002. It continues to be a unique and special place for curious cooks and chefs to come together. The ethos of the school has always been about making home cooking a pleasure; using great ingredients, the right tools and the skills to succeed.
