For the cake:
250g softened butter, plus extra to grease
2 tbsp plain flour to grease
300g caster sugar
4 large eggs
225g self-raising flour
1 tsp baking powder
1 lemon, zest and juice
1 orange, zest
1 tsp vanilla extract
For the icing:
1 lemon, zest and juice
250g icing sugar, sifted
Method:
1. Preheat the oven to 160°C fan. Melt 2 tbsp of butter and brush inside the Nordic Ware Heritage Bundt Pan - 6 Cup. Sprinkle on the plain flour and swirl around to stick to the greased tin, tipping out any excess.
2. Cream together room temperature butter and sugar with an electric mixer until light and fluffy. Beat in the eggs, one at a time until well combined.
3. Sift in flour, baking powder and a pinch of salt. Then add vanilla, lemon zest, orange zest and lemon juice and fold the mixture with a rubber spatula, until just combined.
4. Pour the cake mix into the prepared tin. Bake for 45-50 minutes, or until a skewer inserted into the cake comes out clean.
5. Remove from the oven and leave in the tin until it has cooled enough to handle. Cover with foil to create a layer of steam in the pan helping with the release of the cake. Once cooled, invert the tin to release the cake.
6. To make the icing, mix lemon juice (start with 1.5 tablespoons) into the icing sugar to give a thick but pourable icing; if it is too runny, add more icing sugar. Pour the icing over the cake and top with lemon or orange zest.
