Magimix Cook Expert: Canelé

Canelé is a small French pastry flavoured with rum and vanilla with a soft and tender custard centre and a dark, thick caramelised crust. Prepare you mix with minimal work using your Magimix Cook Expert.

450ml whole milk

125g plain flour

1 vanilla pod

225g caster sugar

2 medium eggs

2 egg yolks

60g unsalted butter

50ml dark rum


1.Put the butter, vanilla seeds and roughly half of the milk into the metal bowl and run EXPERT 3 minutes/speed 2A/60°C.
2.Add the rest of the milk and rum. Run EXPERT 2 minutes/speed 3/0°C.
3.Whisk the eggs together and add to the milk mixture. Run EXPERT 1 minutes/speed 5/0°C.
4.Add the rest of the ingredients and run CAKE/PASTRY.
5.The batter should be the consistency of double cream. Refrigerate the mixture for 24 hours.
6.Pour into canelé moulds and bake for 45-55 minutes at 200°C.
7.Allow to cool completely and enjoy.
