Magimix: Raspberry Sorbet

Ingredients:

Makes 1ltr of Sorbet

450g raspberries

150g water

125g caster sugar

25g Glucose powder (or 25g caster sugar)

1 tbsp lemon juice

 

Method: 

·       Add the sugar and water into a pan. Heat until boiling. Cool in a cold-water bath.

·       Meanwhile make a raspberry coulis, either by using the Magimix Juice Expert 3 with Extra Press fitted, or by blitzing in a food processor and then passing through a sieve. 3.Add the lemon juice and cooled sugar syrup.

·       For best results, chill the mixture in a sealed container in the fridge until it reaches 10C or below (3-4hrs).

·       Place the mixture into the Gelato Expert on the sorbet/ice cream setting. The machine indicator light will flash slowly once the desired consistency is reached.
